Basmati rice is celebrated worldwide for its long grains, delicate aroma, and fluffy texture when cooked. However, for B2B importers and distributors, navigating the world of Basmati can be complex. Designations like '1121', 'Pusa', and 'Sella' represent distinct characteristics that impact price, cooking properties, and consumer preference. Here’s what you need to know.

The Elite Grains: 1121 and 1509 Basmati

The number '1121' refers to Pusa Basmati 1121, a variety developed by Indian scientists that holds the record for the world's longest grain. After cooking, it elongates to over twice its original length. '1509' is a newer variety that has a similar grain length but matures faster, making it a more economical option. Both are highly sought after in international markets for their impressive appearance and non-sticky quality.

The Processing: Raw vs. Sella (Parboiled)

This is one of the most critical distinctions.

  • Raw Basmati: This is the natural white rice. It offers the best aroma and the softest texture but requires more careful cooking to prevent breakage.
  • Sella Basmati: This rice has been parboiled (partially boiled in its husk) before milling. This process hardens the grain, making it less likely to break during cooking. It also locks in more nutrients. The resulting grain has a firmer texture and a yellowish hue. Golden Sella is parboiled for longer, enhancing its color. Sella is often preferred by the catering and restaurant industry for its durability.

The Importance of Aging

Properly aged Basmati rice (typically for 12-24 months) is less sticky and cooks up fluffier. The aging process reduces the moisture content in the grain, ensuring it doesn't clump together.
